I had some fresh peaches sitting out in a bowl that needed used. My neighbor had delivered them at the end of last week after a limb from his tree broke under the weight of too many peaches (odd for a drought year).  While I had cooked some in a mixture of simple syrup and citrus the other day, I still had plenty left for this little treat!

  • Fresh peaches from a tree felled by the weight of too many peaches, hand delivered by my old neighbor, Bob.
  • 1/4 cup of sugar out of a big Domino’s Sugar bag – nothing special.
  •  One splash of lemon juice
  • a couple of teaspoons of corn starch to see what it does (I didn’t seem to have any low sugar pectin on hand).

Slice, de-pit, dump, mix, cover, rest.  Enjoy.
