Yesterday I went through three separate batches of dough for baguettes.  On the last batch I was all baguetted out!  Sitting outside on the patio I drinking a beer, I jumped up and exclaimed to Amy and Oliver, “Let’s make Pizza!”

I ran inside, threw a large sauce pan on the stove top, loaded it with tomatoes from the garden, olive oil, onion, garlic, salt, pepper, a few cayenne peppers, and a bit of water for sauce.  After it cooked down until it was thick and sticky, I pushed it through a strainer to separate the sauce from the skins and seeds.  We were off to a great start!

I took the dough, which had almost quadrupled by now and threw it down on the granite and shaped it into a rough pie.  Topping were the sauce, some mozzarella, and some basil I ran out to the garden and plucked.

This all went into a 550 degree oven until the cheese started turning a nice light brown.

Ahh delicious; simple ingredients, simple pizza.  Don’t be afraid of it!  I’ll say it, this is far superior than any pizzas in the area.
