Great Garlic! This recipe is a good one stolen from David Rocco’s Dolce Vita. You’ve gotta be comfortable not knowing exact measurements to do it though.
- Extra Virgin Olive Oil
- Bread crumbs, toasted
- dried red pepper flakes
Heat the salted water to a boil, add the pasta. While that cooks toast the breadcrumbs and heat the olive oil. Roughly chop the garlic and add it along with the red pepper flakes to the oil to sauté until the garlic just turns golden. In the meantime don’t forget those breadcrumbs or they’ll quickly burn! Add the chopped parsley to them.
Once the pasta just reaches al-denté, drain it and add to the oil, garlic, and pepper mixture. Toss. Add a little pasta water and toss more. Check and add one more round of pasta water if necessary.
Plate, top with breadcrumbs and parsley, Grate parmesan over the top and eat!
