I’ve apparently grown a shitload of tomatoes that decided they’re no longer interested in turning red.  So with a few days longer weekend I ended up pickling a few, and now I’m on to a savory green tomato pandowdy.

Savory Green Tomato Pandowdy


  • 4 medium to large-sized green tomatoes
  • 1 large onion
  • 3 to 8 okra
  • 2 green peppers
  • basil or other savory herbs out of the garden
  • salt and pepper
  • olive oil
  • Prepared pie crust


Clean, slice and prepare all the vegetables.  Add enough olive oil to coat the bottom of a newly purchased deep dish pie pan from TJ Maxx or other cheap-ass discount store.  layer the ingredients with a dash of salt/pepper between each layer.  I repeated the layering three times.  Take the prepared pie crust and invert it over the deep dish pie plate.  Tuck it in and seal all the vegetables and then cut a few steam vents in the top center.

Bake for 35 to 45 minutes in a 400 degree oven.

Enjoy this hot, cold or for tomorrow’s breakfast.
