Finally put together a white sandwich bread formula that works every time.  Makes two large loaves.

Dry Ingredients

  • 800 grams AP flour
  • 200 grams bread flour
  • 20 grams salt
  • 30 grams sugar
  • Yeast

Liquid Ingredients

  • 1 cup milk
  • 3 tablespoons butter
  • 2 eggs
  • Enough water to make the total liquid volume 600 grams

Melt butter, add milk and heat to 90-100 degrees.  Add eggs and mix.  Add enough warm water to bring too 600 – 620 grams weight.

Mix dry ingredients together, add wet.  Knead until smooth.  Rise until double in warm place.  Either shape into two loaves or 24 rolls or some sort of number of whatever you want in between rolls and loaves.

Bake loaves 35-40 minutes at 375, bake rolls less than 35 minutes but more than 20 in 375 degree oven.  Rest for 45 minutes before eating.
