A good ham salad is made from leftovers, and a great ham salad made from old leftovers full of fermented goods.  This one is no exception.  The aged country ham (cooked earlier this year) is from the freezer stash, it is mixed with mayonnaise, salt-preserved egg yolks, last year’s attempt at applejack that turned out to be some great cider vinegar, sauerkraut, pickled jalapenos, and finally seasoned with a little ground black pepper and a little mustard.  It went great with the toasted bread and the spicy pickled.leftovers into ham-salad
