Or, Holy F*#&*# S4!% that cheese dried out fast!

The cheese cave is going through a small round of troubleshooting and will be receiving some upgrades this weekend.  Up until the last two weeks, the humidity was perfect, the RH in the upper 70’s most of time.  But when the outside temperature dropped below 10 degrees for a short period, the humidity dropped with it, falling around RH of 50.  Some of the cheeses quickly dried out.

I am staying away from active humidification for now since the room isn’t in need of the higher humidity. Instead I’m going to pick up some glass cloches to cover the cheeses individually or in small, like groups and then manage the humidity specific to the cheese clusters.

I’ll keep you updated on my mistakes so that you’ll be able to avoid them in the future.
